Cakes-Pumpkin pound cake

We had Open House and I wanted to make some things that reminded me of Fall.


Pumpkin Pound Cake



Ingredients:

1c (2sticks) butter, softened
1c sugar
3/4c brown sugar
1 1/2tsp vanilla
15oz (1can) pumpkin puree
5 eggs
2tsp pumpkin pie spice
1/2tsp salt
2tsp baking powder
1tsp baking soda
3c AP flour

Directions:

1.  Cream butter, sugar, brown sugar, and vanilla on medium speed.  Add pumpkin, salt, spices, and egg then slowly add baking powder, baking soda, and flour on low speed.
2.  Line 2 loaf pans with parchment paper (see picture), divide batter into the two pans and bake @325 for 30min or until toothpick come out clean from center.
3.  Let cool for 10-15min before removing from pan
Yield 2 loaves


Notes:
-Lining the loaf pans with parchment paper makes them easy to lift out after baking.
-The original recipe also had a maple pecan glaze that sounds delicious I just didn't have time to try it.


The Verdict:
Tastes like dense pumpkin bread.  Like pumpkin pie for breakfast!
