Cherry Cordial cupcakes

Had the urge to make some chocolate cherry cupcakes.

Cherry Cordial Cupcakes


Ingredients:

Cake
1box Chocolate Cake mix
3/4c buttermilk
1/4c maraschino cherry juice
1/4c rum
3 eggs, 1 egg yolk
oil according to box directions

Frosting
1c (2sticks) butter, softened
1tsp vanilla
1c confectioner's sugar
1/4c maraschino cherries, chopped
1tsp rum extract
1-3tbs whipping cream

dried cherries and chocolate chips for topping

Directions:

1.  Combine cake mix, buttermilk, cherry juice, rum, eggs, and oil on low speed until integrated and then beat on medium high speed for 2min.
2.   Fill cupcake liners 2/3 full bake @350F for 10min then reduce to 325F until done (~10 more min).
3.  Combine confectioner's sugar, extracts, butter, and cherries.  Add whipping cream and cherry juice until right consistency is reached (add more cream than juice).
4.  Pipe frosting onto cooled cupcakes and top with dried cherries and chocolate chips
Yield 2 dozen


Notes:
-Could use all rum or all rum extract, but if you use extract in the cake use the normal 4 whole eggs.
-Can melt 1c chocolate chips with 2tbs vegetable oil and dip the top of the frosted cupcakes (place in freezer first for 20min) into the chocolate and top with dried cherries.


The Verdict:
Amazingly good, did actually taste just like a cherry cordial
